Amaretti Cookies
Amaretti Cookies Recipe
Ingredients:
2 cups ground almonds
1 cup caster sugar
2 large egg whites
1 teaspoon almond extract
1 teaspoon vanilla extract
1/2 teaspoon lemon zest (optional)
Powdered sugar, for rolling
Instructions:
Preheat your oven to 325°F.
Line a baking sheet with parchment paper.
In a large bowl, mix together the ground almonds and caster sugar.
In a separate bowl, whisk the egg whites until they form soft peaks.
Gently fold the whisked egg whites into the almond and sugar mixture until well combined.
Add the almond extract, vanilla extract, and lemon zest (if using) to the mixture and stir until a sticky dough forms.
Using a teaspoon or a small cookie scoop, scoop out small portions of the dough and roll them into balls with your hands, then roll them in powdered sugar.
Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
Lightly press down on each dough ball to flatten them slightly.
Bake in the preheated oven for 15 minutes, or until the cookies are lightly golden and slightly cracked on top.
Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
