Amaretti Cookies Recipe

Ingredients:

  • 2 cups ground almonds

  • 1 cup caster sugar

  • 2 large egg whites

  • 1 teaspoon almond extract

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon lemon zest (optional)

  • Powdered sugar, for rolling

Instructions:

    • Preheat your oven to 325°F.

    • Line a baking sheet with parchment paper.

    • In a large bowl, mix together the ground almonds and caster sugar.

    • In a separate bowl, whisk the egg whites until they form soft peaks.

    • Gently fold the whisked egg whites into the almond and sugar mixture until well combined.

    • Add the almond extract, vanilla extract, and lemon zest (if using) to the mixture and stir until a sticky dough forms.

    • Using a teaspoon or a small cookie scoop, scoop out small portions of the dough and roll them into balls with your hands, then roll them in powdered sugar.

    • Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

    • Lightly press down on each dough ball to flatten them slightly.

    • Bake in the preheated oven for 15 minutes, or until the cookies are lightly golden and slightly cracked on top.

    • Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
