Chicken Kafta Kabob

Ingredients:

  • 1.5 pounds ground chicken

  • 1 small onion, finely grated or minced

  • 3 cloves garlic, minced

  • 1/4 cup fresh parsley, finely chopped

  • 1/4 cup fresh cilantro, finely chopped

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1 teaspoon paprika

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon ground allspice

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon red pepper flakes (optional)

  • 1 large egg, beaten

  • 1/2 cup bread crumbs 1/2 cup chopped stale bread soaked in 1/4 cup milk

  • Wooden or metal skewers

  • Cesira olive oil for drizzling 

Instructions:

  1. Prepare the Kafta Mixture:

    • In a large bowl, add the bread crumbs and milk let it soak for five mins. Then 

    • Add the ground chicken, grated onion, minced garlic, parsley, cilantro, cumin, coriander, paprika, cinnamon, allspice, salt, black pepper, red pepper flakes (if using), beaten egg, to the bread crumb mixture. Mix until well combined.

  2. Shape the Kafta:

    • With wet hands, shape the mixture into oval patties or cylindrical logs. If using skewers, form the mixture around the skewers to make kebabs. If not using skewers, simply form the mixture into patties.

  3. Preheat the Grill or Oven:

    • Preheat your grill to medium-high heat, or preheat your oven to 375°F (190°C).

  4. Cook the Kababs:

    • If grilling, lightly oil the grates to prevent sticking. Drille olive oil and Grill the kafta kababs for about 4-5 minutes per side, or until fully cooked through and nicely charred. If baking, place the kababs on a baking sheet lined with parchment paper, drizzle olive oil  and bake for 20-25 minutes, turning halfway through, until cooked through.
