Marinated White Beans in Olive Oil Recipe

Ingredients:

•               2 cups cooked white beans (such as cannellini or Great Northern beans), drained and rinsed if using canned

•               1/4 cup Cesira extra virgin olive oil

•               2 cloves garlic, thinly sliced

•               1/2 teaspoon red pepper flakes (optional, for a bit of heat)

•               1 tablespoon fresh lemon juice

•               Zest of 1 lemon

•               1 tablespoon fresh parsley, chopped

•               1 tablespoon fresh rosemary, chopped

•               Salt and pepper to taste

Instructions:

1.             Prepare the Marinade:

•               In a large bowl, combine the extra virgin olive oil, sliced garlic, red pepper flakes, lemon juice, lemon zest, chopped parsley, and chopped rosemary. Mix well.

2.             Add the White Beans:

•               Gently fold in the cooked white beans, ensuring they are well-coated with the olive oil marinade.

3.             Marinate:

•               Cover the bowl with plastic wrap or transfer the beans to an airtight container. Refrigerate for at least 1 hour, but ideally for a few hours or overnight, to allow the flavors to meld together.

4.             Serve:

•               Bring the marinated beans to room temperature before serving. They can be served on their own as a side dish, added to salads, or enjoyed with crusty bread or pita.

5.             Garnish and Enjoy:

•               Before serving, adjust seasoning with salt and pepper, and garnish with additional fresh herbs if desired.
