Mediterranean Orzo Salad
Ingredients:
• 1 cup orzo pasta, cooked and cooled
• 1/2 cup cherry tomatoes, halved
• 1/4 cup cucumber, diced
• 1/4 cup red onion, finely chopped
• 1/4 cup feta cheese, crumbled
• 1/4 cup Kalamata olives, sliced
• 3 tablespoons Cesira extra virgin olive oil
• 2 tablespoons lemon juice
• 1 teaspoon dried oregano
• Salt and pepper to taste
• Fresh parsley, chopped (for garnish)
Instructions:
1. In a large bowl, combine cooked orzo, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
2. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
3. Pour the dressing over the salad and toss to combine.
4. Garnish with fresh parsley and serve.
