Mediterranean Orange Blossom Olive Oil Cake:

Ingredients:

  • 1 1/2 cups all-purpose flour

  • 1 cup granulated sugar

  • 1/2 cup Cesira extra virgin olive oil

  • 3 large eggs

  • 1/2 cup plain Greek yogurt

  • Zest of 2 oranges

  • 1/4 cup fresh orange juice

  • 1 tbsp orange blossom water

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt

  • Powdered sugar, for dusting (optional)

  • Orange slices and edible flowers, for garnish (optional)

  • Cardamom powder

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper for easy removal.

  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

  3. In a separate bowl, whisk together the olive oil, eggs, Greek yogurt, orange zest, orange juice, and orange blossom water until smooth.

  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  6. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.

  7. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, carefully transfer the cake to a wire rack to cool completely.

  8. Once the cake has cooled, dust the top with powdered sugar if desired and garnish with orange slices and edible flowers for a beautiful presentation.
